Paleo Chocolate Donuts

Because everyone should be having donuts this week! These donuts, unlike their conventional fried counterparts are baked, paleo, vegan and sugar free, sweetened only with dates. Make sure to use a silicone pan to bake them as the regular metal donut pans did not come out as easily and broke up.
Note: These can be baked in any shape - muffin cups are fine as well!

Paleo Chocolate Donuts
1 cup pitted Medjool dates
3/4 cup hot water
3/4 cup almond flour
1/2 cup cacao powder
1/2 tsp. baking powder
2 tbsp maple syrup
1 tbsp cold brew or regular coffee, optional but delicious
2 tsp. pure vanilla extract
Pinch of sea salt
Preheat oven to 350 degrees. Soak dates in hot water 10 minutes. Blend dates until smooth. Add the almond flour, cocoa powder, honey, vanilla and sea salt to blender and blend again.
Spread the mixture into silicone donut pan. Bake for 12-15 minutes, and allow to cool before removing. Can top with chocolate drizzle, sprinkles or powdered coconut flour.
