Vegan Pesto Pasta Alfredo

Whenever going to a fancy restaurant back when me and my husband were just dating, I remember the mental argument of whether I should order pasta with pesto or pasta alfredo, since those were probably my two most favorite things, after the restaurant bread basket. These days, I may have a WAY more restrictive diet, but that doesn't mean I deprive myself of foods I love. I invented this creamy pesto alfredo sauce that is completely guilt free. I used Banza pasta made of chickpeas, to keep things gluten free and grain free. I have tasted EVERY alternative pasta and Banza is by FAR AND AWAY the best....So here it is, a pesto alfredo pasta that is low- fat, dairy free, gluten free, and nut free. Get your pencil and paper out!

Vegan Pesto Pasta Alfredo

2 bunches basil

1 bunch mint

1/4 c oil

1/4c water

1/4 c hemp seeds

1 garlic clove

salt, to taste

1 box Banza pasta, any variety

Blend all pesto ingredients together in a high speed blender (I use the BlendTec mini jar). Cook Banza pasta according to box instructions. Allow pesto to sit and thicken about 10 minutes. Mix together. Optional- Add sautéed mushrooms and/ or sun-dried tomatoes for extra flavor.
