"Secret / Magic" Chocolate Muffins

Obviously y kids couldn't agree on a name for these muffins when we baked them together yesterday so I incorporated both names! The "secret" in them is that these muffins have some chocolate chips inside them, the "magic" is that they are healthy while also tasting delicious! Both my kids DEVOURED these muffins (and so did I!) They are allergy friendly (no nuts, eggs, dairy or gluten if you use certified gluten free oats) plus they are easy enough for kids to practically whip up by themselves!

Secret/ Magic Chocolate Muffins

1 1/4c oat flour (or processed about 1 1/2 c rolled oats into flour)

1/4 c cocoa powder (I use cacao)

1 tsp baking powder

1/2c coconut sugar (feel free to go less on the sugar, I like things less sweet, but my kids would disagree- you can reduce to 1/3c)

1 flax egg (1 tbsp flax combined with 3 tbsp water)

1 c non- dairy milk

1/3c Sunbutter

1 tsp vanilla

1/4 c Enjoy Life mini chocolate chips, divided

Preheat oven to 350. Mix flax egg and let sit 5 minutes. Warm up Sunbutter to make it easily spreadable. (I simple put the sunbutter in a bowl inside a hot water bowl). Mix dry ingredients including 2 tbsp chocolate chips and wet ingredients separately and then combine. Pour into silicone cupcake molds and add the remaining 2 tbsp chocolate chips to the top. Bake 15 minutes.
