Chia Pudding Bowls

Chia pudding bowls are one of my favorite things to eat for breakfast, snack and dessert! They don't require any cooking and takes under 30 minutes to fully set (no waiting overnight for me!) This recipe is 6 ingredients and a cinch to make!

Chia Seed Pudding Bowls (serves 2)

1/2c chia seeds

1 cup almond milk or any non- dairy milk

1 tbsp maple syrup

1 tbsp coconut butter, melted (or any nut butter)

few shakes cinnamon

1 tsp vanilla

Mix all ingredients (not toppings) together, whisking well to break up any chia clumps. Keep the mixture on the counter for 5 minutes and whisk around a few times for the 5 minutes. After 5 minutes, place in 2 pudding cups or small bowls and set in fridge about 25 minutes. The pudding lasts several days in the fridge.

Optional Toppings

The sky is the limit when it comes to chia pudding bowl toppings but some of my favorites include homemade granola, fruit, fruit compotes, nuts, seeds, nut butters, coconut, dark chocolate, cacao nibs....
