Allergy Friendly Granola For the Whole Family

This granola is vegan, gluten free and allergy friendly, making it perfect for kids and their parents alike! I love this recipe because once its baked, it has these ENORMOUS crispy clumps that my kids love! Use your kids and your own favorite mixins and you'll never buy store bought granola again!

Allergy Friendly Granola

2 cups rolled oats (gluten free if needed)

2 cups quick cooking oats (or rolled oats pulsed in a processor)

1c raw buckwheat

2 tsp cinnamon

1/4c sunbutter (any nut butter works but if it is not the drippy kind, make sure to heat it up to melt it first in order to mix it in)

1/4c coconut oil, melted

1/4c water

between 1/2c- 2/3c maple syrup (depending on how sweet your family likes)

2 tsp vanilla

1/2c mixins - including chocolate chips, raisins, raisins, nuts, seeds, cacao nibs, dried fruit...

Preheat oven to 325. Mix wet and dry ingredients separately, then combine and mix well by hand, making sure all the oats are coated. Place on 2 separate parchment lined trays in one layer (do not try to force the whole batch onto one tray because it won't get crispy!) Bake 25-30 minutes, flipping trays around at the 15 minute mark. Keep trays in oven an extra 15 minutes once oven is off with door ajar. This recipe keeps best in the freezer in freezer- safe storage bags.
