Chickpea Chocolate Chip Cookies

My favorite cookies, using my favorite baking secret- chickpea flour! These cookies taste so good no one will know that they contain healthy ingredients along with some protein, fiber and heart healthy fats! This recipe is adapted from Oatmeal With A Fork.

Chickpea Chocolate Chip Cookies
1 1/2 cups + 2 table spoons chickpea flour (make sure its cold, keep it in the freezer until use)
1/2 tsp salt
1 teaspoon baking soda
2 tablespoons coconut sugar
1/3 cup coconut oil, melted before measuring
5 tablespoons maple syrup
1 teaspoon vanilla
1/4 c chocolate chips
1-2 teaspoons water, if needed to bring dough together.
Preheat the oven to 350. Mix flour, salt, baking soda and sugar. Stir in oil, maple syrup and vanilla util well combined. Add one drop of water at a time, if needed to bring dough together. Roll the dough into 8 balls and place them onto a parchment lined baking street. Flatten out the balls a little and add the chocolate chips to the tops of the cookies. Bake 12-14 minutes until lightly golden. Let cool before eating.
