Strawberry Soft Serve

My kids are good eaters. They've been trained to try new foods and distinguish healthy food from junk. HOWEVER, whenever I ask them to bake with me, they are understandably skeptical- They'll look at me sideways and say something like "are we going to put chickpeas or avocado in this dessert?"
Over the snowstorm, I asked them if they wanted to make strawberry frozen yogurt and they wondered what funky ingredients we'd be using, but when I assured them it was just strawberries, maple syrup and "cream" (coconut of course!) they were game to try. The results were MY MOST SUCCESSFUL KIDS RECIPES EVER. YES. You read that right! Both kids LOVED IT! And so did I!
Strawberry Soft Serve
1 16 oz bag of frozen organic strawberries
1/4 cup maple syrup (this is a very kid friendly amount and you can definitely reduce the sweetener)
1/4 cup coconut cream (the hard part of the coconut milk when refrigerated over night)
Blend all ingredients. Eat immediately or freeze in little cups with a stick inside to make ice pops. (They dove into these too fast to properly photograph them, but take my world for it, these were amazing)

My kids were WAY too excited to actually photograph this Soft Serve, so here's a shot of my daughter eating the ice pop version!
