Kid- Friendly Vanilla Cupcakes

I am learning more and more each day that kids really are easier to please than we think! At last week's preschool cooking class, we made extremely low sugar cupcakes and then I put a teaspoon of melted chocolate on top of each one for them- no elaborate frosting, no chocolate chips inside, a simple drizzle of chocolate on top made them ECSTATIC! I think we sometimes overestimate how much sweetener our kids need in a dessert, which is why whenever I take recipes off the internet to test out, I almost always automatically cut the sugar between a half or a third! Here is one such recipe modification that we made in cooking class this week! The original recipe idea is from itdoesnttastelikechicken.com if you want to check out the original!
Note: This recipe is made with spelt flour and is not gluten free. Almost all other recipes on this site are!

Kid- Friendly Vanilla Cupcakes
1 1/4 cup white spelt flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup non- dairy milk
1/3 cup avocado or olive oil
2 tablespoons apple cider vinegar
2 teaspoons vanilla
Preheat the oven to 350. Line a cupcake pan with parchment or silicone liner. Mix dry and wet ingredients separately. Pour the wet ingredients into the dry, just until combined. Bake 18-20 minutes (less if using the mini muffin liners). Allow to cool VERY WELL before taking out of the muffin liners. You can freeze it to cool it quicker.
