I recently met Julia Chebotar, chef- owner of The Organic Grill in NYC and IIN health coach student. The Organic Grill is a innovative vegetarian restaurant with some of the coolest dishes and tons of vegan comfort foods! I am stoked to pass on Julia's Super Seed Waffle recipe, that she sells in the store and which is SO delicious! Both me and my kids gobbled the waffle up when she made it and when she sent along the recipe, of course I made it over and over again!

Super Seed Waffle
Recipe by: Julia Chebotar, The Organic Grill
1 cup spelt flour (Bob's Red Mill)
1/3 cup flax seeds
1/3 cup chia seed
1/3 cup hemp seeds
2 tablespoons maple syrup
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons coconut oil, melted
1 1/4 cuper soy milk or coconut milk*
3 tablespoons apple sauce or mashed banana
Place flour, maple syrup, milk, baking soda, apple sauce/ banana and coconut oil in a bowl and mix. Add seeds to the batter and whisk. Heat a waffle maker and pour a ladle full of batter onto the waffle plates. Cook until golden. Serve with sliced fresh fruit (strawberry, raspberry, pineapple and banana). Serve with maple syrup!
* I used almond milk and Ripple, both of which came out totally fine.
