Spelt Chocolate Chip Mini Muffins

I always want my kids to associate a healthy lifestyle with delicious food! Any of my recipes are aimed to please on two fronts- to the person cooking/ baking it, the recipe and ingredients need to be simple and to the people eating it, it needs to actually taste good! These mini muffins came about when my daughter asked me one too many times to buy her Entemann's Little Bites. In said little bites are modified corn starch, artificial flavor, caramel color, way too many preservatives to even type here and their first ingredient is sugar! Instead, I made a batch of these chocolate chip mini muffins and the kids were able to bake them with me! The result was the same happy kids without the junky ingredients!

Spelt Chocolate Chip Mini Muffins (Makes 24 minis)

1 1/4 cup spelt flour

1/2 cup coconut sugar (Add 2 extra tablespoons for pickier kids that need these sweeter)

1 teaspoon baking soda

pinch, salt

1/2 cup non- dairy milk

2 flax eggs (2 tablespoons flaxmeal with 6 tablespoons water, let sit 5 minutes before adding to the recipe)

1/4 cup avocado oil

2 tablespoons apple cider vinegar

1 teaspoon vanilla

Chocolate chips (between 1/4-1/2 cup)

Pre- heat oven to 350. Mix wet and dry ingredients separately then combine. Place into a mini muffin pan (I used a silicone mold to get them out easily). Bake 12-15 minutes.
