Homemade Pasta Sauce

If you are someone who enjoys making food from scratch, like I do, then having a go-to homemade pasta sauce at your disposal is absolutely necessary. I don't use canned tomatoes ever because of the potential risk of having BPA leached into my food (the acid in tomatoes makes it particularly vulnerable). Instead, I use the POMI brand Organic tomatoes in the box since fresh in season tomatoes are not always available to me.

Easy Homemade Pasta Sauce
1 box Pomi Organic Finely Chopped Tomatoes
1 box Pomi Organic Strained Tomatoes
1 tablespoon oil
2-3 teaspoons salt, or to taste
1 teaspoon black pepper
2 teaspoons smoked paprika
2 teaspoons dried oregano
3 cloves garlic, crushed or 2 teaspoons jarred garlic
1-2 teaspoons capers, optional
Olives, sliced, optional
1/3 cup pasta water (if not available, use regular water)
Mix all ingredients into a large stockpot. Heat on medium heat until boiling, then reduce to simmer about 40 minutes.
