Quick and Easy Carrot- Ginger Dressing

I have too many friends who pick up a salad from local salad joints every day of the week. Around here, salads cost about $12 and often I see them carefully picking out the items they don't like! It seems so insane and wasteful to spend $60 a week on lunches when you don't even love all the mix- ins! If you are someone who wants to eat some lunches from home (and save some cash!) then you absolutely MUST find a bunch of salad dressing recipes that you love and that are easy enough to whip up in under 5 minutes. This carrot- ginger dressing has a small ingredient list, is super easy to make and gives your salad a burst of flavor (and nutrition!)

Carrot Ginger Dressing
2 carrots, peeled and cut into chunks
2 tablespoons miso paste (I used chickpea miso)
2 tablespoons rice wine vinegar
1/2 cup avocado oil (or other neutral oil, olive oil has too much flavor for this)
1 knob ginger, peeled
about 1/3 cup water, to thin into a dressing consistency
Blend everything together, leaving the water for last to decide how much is needed.
