Basic Vegan Banana Bread
Makes 1 loaf pan or 18- 20 mini muffins
1 cup very ripe banana (2-3 brown bananas)
1/2 cup coconut sugar (experiment with less if using chocolate chips or chunks for topping. Alternatively, you can add 2 more tablespoons of coconut sugar, if desired).
2 tablespoons avocado Oil
Vanilla
1/3 cup non- dairy milk
1 1/2 cups spelt flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons warm water to thin out batter
Chocolate chips or chunks, optional, to top
Preheat oven to 350°. Mash banana until smooth. Mix in sugar, canola oil, milk and vanilla.Add flour, baking soda and salt gently just to incorporate. Do not over mix. Place in muffin tin or loaf pan and top withchovokate chips or chunks, if desired.
Bake about 15 minutes for muffins or 35-40 for loaf cake.
