
I used to assume that by now every single human being has tried cauliflower rice. After all, brands like Green Giant and Trader Joe's are selling the cauliflower already riced in every grocery store! Last week, my sister in law called me asking "How do I make cauliflower rice?" which got me thinking that maybe there is someone else out there in the world that also hasn't yet made cauliflower rice. So for anyone out there curious about this trend, get on this recipe, it is so easy and so fantastic!

Cauliflower Rice Pilaf
1 head cauliflower, grated in a processor or by hand in a box grater (I am a cauliflower rice snow and only like it grated by hand)
1 onion, chipped
1 clove garlic, minced
1 handful parsley
sprinkle, red pepper flakes
squeeze lime or lemon juice
salt, to taste
Saute the onion, garlic and pepper flakes over medium heat tin a large saute pan. Add cauliflower, and cover to cook about 10 minutes. When soft, remove from heat and cover with kitchen towel. When ready to eat toss with fresh parsley, salt , red pepper flakes and lemon juice
