SunButter Energy Bites

Are your kids chronically late for school? Do they skip breakfast because the never have time to eat? Both my kids NEVER get to school on time (Both my kids stroll into class a half hour late EVERY DAY) For the hectic days where they need to eat and run, these energy balls are the perfect solution - pop a few in your kid's mouth as they are brushing their teeth, getting their uniform on and fixing their hair, all at the same time! This recipe is gluten free (just use gluten free certified oats) allergy friendly and no equipment needed!

Sunbutter Energy Bites

2 1/2 cups quick oats (gluten free if necessary)

1/2 c sunbutter (can use other nut butters)

1/2 c maple syrup (can use less if the nut butter is sweetened)

2 tbsp chia seeds

1/4c flax seeds

2 tbsp water

3 tbsp mini chocolate chips (I use the Enjoy Life)

Mix all ingredients and use wet hands to form into balls, or pat into silicone mold. Can use drizzled chocolate instead of chocolate chips. Keeps in the freezer.
