Giant Greek Lima Beans

I am always replicating my favorite restaurant dishes at home and these Lima beans are one of my absolute obsessions. I first had them on a date with my now husband (around 12 years ago) at Avra Estiatorio in New York City. We ordered a TON of food but these stuck out as being the most insanely delicious vegetable dish I've ever tasted. When I came upon a bag of large lima beans at the supermarket yesterday, I knew I had to make them!

Giant Greek Lima Beans
1 bag large Lima beans
1 red onion, sliced
3 cloves garlic
1 jar tomato sauce, I use homemade but an organic, low sodium jar is also good
2 tbsp oil
Water, if needed, to thin sauce
Salt and pepper, to taste
4-5 sprigs thyme, optional
2/3 sprigs Rosemary, optional
First quick soak the beans- place beans with cold water to cover in a pot. Bring up to a boil and boil 2-3 minutes. Then shut off, cover and let sit 1 hour. This method will make the beans much more digestible (I get crazy stomach aches from beans that have not been properly soaked).
Throw all ingredients into a roaster and cook about 2 hours until beans are soft.
