Raw Falafel in Endive Spears
1- 2 endives, broken off into spears
2 cans chickpeas, drained and rinsed
2/3 c sunflower seeds
2 carrots, chopped up
2-3 sprigs scallions, chopped
1 clove garlic
1 cup parsley, chopped
sprinkle of dry oregano, turmeric and dried mint
2 tbsp lemon juice
2 tbsp olive oil
salt and pepper to taste
Blend or process chickpeas and sunflower seeds first. Then add remaining ingredients and process again until smooth. Spoon into endive spears.
