Apple Cinnamon Date Bars

These apple cinnamon date bars will take the place of any bars you currently buy from the store (kind bars, lara bars...) they are dense and chewy and yum! Plus they are completely grain free and is sweetened only by dates (unless you use the optional 1 tablespoon maple syrup in the crust). This recipe is inspired by Jay's Baking Me Crazy Blog which has great paleo recipes!

Apple Cinnamon Date Bars
Dough
1 1/2 cups almond flour
2 tablespoons coconut flour
generous sprinkle of cinnamon
1/2 cup unsweetened applesauce
1 tablespoon maple syrup, optional, if you want it sweeter
Filling
8-10 dates, placed in hot water a few minutes to soften
generous sprinkle of cinnamon
1 sweet red apple, grated
Blend all ingredients
Preheat oven to 325 and line a load pan with parchment paper. Combine all filling ingredients in a blender or processor until smooth. In a separate bowl, combine the flours, cinnamon and applesauce. Taste and add maple syrup if desired. Mix well and remove a1/4 of the dough and place aside. With the remaining down, press down into a loaf pan. Top with date and apple mixture. Crumble the remaining dough into crumbs and place on top. Bake 30 minutes. Allow to cool 10-15 minutes before cutting into bars. (I like to throw it into the freezer to cool down quicker).
