Peanut Butter Tempeh

I came up with this recipe when I wanted to include a tempeh into my meal prep for the week but none of my recipes were exciting me. I saw my jar of peanut butter staring at me from the fridge and knew that I needed peanut butter on my tempeh . Of course you could use this marinade on a bunch of different proteins and I will try this recipe with sunbutter next time.

Peanut Butter Tempeh
1 package tempeh
2 tablespoons tamari
2 tbsp rice wine vinegar
2 tbsp pb
1 scallion chopped
1 garlic, minced
1 tbsp maple syrup
1 tbsp water to thin out
Preheat oven to 350. Mix marinade ingredients together and whisk well. Slice tempeh in cubes or strips. Coat tempeh in marinade and place in a single layer in a pyrex. (Feel free to marinate it if you have time to spend). Bake covered for 30 minutes, flipping the slices at the midway point.
