World's Easiest Passover Cookie

Lucky for you all, I am officially ready to begin recipe testing for the upcoming Passover holiday! For anyone that doesn't know, Passover is an 8 - day holiday with many dietary restrictions, including most wheat and gluten products (except for Matzah). With the trendiness in paleo eating (no grains or legumes) Passover has become way easier to deal with in recent years! Give me some almond and coconut flour and I can make tons of yummy desserts!
What I love most about this cookie is how easy it is to whip together. And by the way, the ONLY sweetener in this recipe is bananas!

World's Easiest Passover Cookie
2 cups blanched almond flour
2 very ripe large bananas, mashed
3 tablespoons cocoa or cacao powder.
1 tablespoon chia seeds, optional
Preheat oven to 350. Mix all ingredients and roll into balls. Flatten down the center. (Its ok if they are mushy and slightly hard to form). Place on a parchment lined tray and bake about 12 minutes until the centers are set.
