Oatmeal Chocolate Chip Cookies

It takes a lot for a cookie to excite me- oatmeal, chickpea, almond flour, coconut flour- you name it and I've made it so many times... it all gets a little blah...It takes a lot for a cookie to excite me- oatmeal, chickpea, almond flour, coconut flour- you name it and I've made it so many times... it all gets a little blah...But then this cookie recipe came along and it is SO MUCH BETTER than anything else I've made in a long time, I couldn't help but get excited about cookies all over again!
This recipe is adapted from this Chocolate Covered Katie's The Best Healthy Chocolate Chip Cookie.

Oatmeal Chocolate Chunk Cookies
1 1/4 cup oat flour (made by blending gluten free oats)
1/4 teaspoon baking soda
pinch, salt
1/3 cup coconut sugar
2 tablespoons avocado oil (or coconut oil)
3 tablespoons non- dairy milk
1 tsp vanilla
1/4 cup Enjoy Life Chocolate chips or chunks (or less depending on how chocolatey you like it)
Preheat oven to 375. Combine dry and wet ingredients separately and then combine. Mix well and form into balls. Place on parchment lined tray Press down on balls slightly and bake 8 minutes. Let cool at least 10 minutes before removing the cookies from the tray. Eat immediately. If eating the next day, place cookies back into a toaster or oven 3-5 minutes to re-warm.
