4 Ingredient Breakfast Cookies

I’m a sucker for recipes that anyone can make- my 98 year old grandma, my 5 year old daughter and possibly even my husband! This is definitely one of those ‘anyone can do it’ scenarios- there’s only 4 ingredients and the only techniques needed are knowing how to open the oven, and being adept at mixing things in a bowl! As an added bonus this recipe is chock full of healthy carbs, protein and fat, contains no sweetener other than banana and will give you sustained energy! I’m thinking these are the perfect pre and post workout snack!

4 Ingredient Breakfast Cookies

(Makes about 16 cookes)

2 cups quick oats

2 ripe bananas

1/2 cup almond butter (the drippy kind is preferred here. I used Trader Joe’s)

1/4 cup chia seeds

Optional mix ins- blueberries, raisins, chocolate chips, nuts (the sky is the limit!)

Preheat oven to 350. Mash bananas by hand and add remaining ingredients. Mix well. Using wet hands roll into balls and flatten slightly. Bake for 12-15 minutes.
