Smoky Split Pea Soup
1 carrot, peeled and chopped
1 onion. chopped
1 celery, chopped
3 small potatoes, peeled and chopped
2 cloves garlic, minced 2 cups split peas 3 cups broth 3 cups water
1 can/ tube tomato paste 2 bay leaf 1/2 Kombu stick 1 teaspoon cumin 1 teaspoon allspice 1 teaspoon Alleppo pepper 1 teaspoon paprika 1 teaspoon liquid smoke (I like Staubbs Mesquite Liquid Smoke)
Soak split peas in cold water overnight. Drain and rinse split peas. Saute carrots, onion, celery, garlic and potatoes 8- 10 minutes. Add liquid, bay leaf, kombu and seasoning and bring to a boil. Reduce to a simmer and cook about 1 hour until split peas are soft.
