Chocolate Chunk Banana Bread

Inspired by Isa Chandra’s Vegan Marble Banana Bread, this version uses spelt flour and a reduced amount of sugar. Her original recipe is to die for, but my family loves this version just as much as hers! See the original recipe here:

Chocolate Chunk Banana Bread

3 ripe bananas, mashed 1/2 cup+ 2 tablespoons coconut sugar (for a less sweet version, cut the last 2 tablespoons)  1/2 cup unsweetened non- dairy milk  2 tablespoons neutral oil (I use avocado) 1 teaspoon vanilla 1 1/2 cups spelt flour 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon Enjoy Life Mega Chunks, optional, to top banana bread Mix up batter in order of ingredient list. Don’t overmix. Place in loaf pan and bake on 350 for 45-50 minutes.
