Almond Butter Lactation Mini Muffins

Breastfeeding is HARD! I’ve been exclusively nursing for 4 months now and I’ve endured a ton of challenges along the way- mastitis, dip in milk supply, baby’s nursing strike- you name it! I’m not one to back away from a challenge and I’m thrilled to still be working on the whole breastfeeding thing!

Here is one of my favorite snacks to keep on hand- it has so many breastfeeding supportive ingredients, such as almond butter, oats and flax. These muffins are only sweetened by the bananas and chocolate chips, if using. For these I chose the California Gourmet 72% dark chocolate chunks, which have less sugar than the Enjoy Life chips.

One more thing to note- you don’t have to be a lactating mom to enjoy these! It’s a great anyone, anytime snack!

These treats are vegan, gluten free (just used certified gluten free oats) and naturally sweetened with bananas (no sugar or maple syrup!)

Almond Butter Lactation Mini Muffins 1 Cup almond butter 1 cup oat flour 2 ripe bananas 1 tsp baking soda 2 flax eggs (2 tbsp flax mixed with 6 tbsps water, let sit for 5 minutes) â…“ cup non dairy milk Chocolate chips, optional Preheat oven to 375. Blend all ingredients except the chocolate chips until thoroughly incorporated. Fold in chocolate chips and pour into mini muffin cups. Bake 12-14 minutes. Allow to cool 5 minutes before removing
