Tempeh Skewers with Tomatoes

People often come with me with anxiety when a healthy person is coming to their holiday table. I always hear "I just don't know what to cook for _________" Feeding healthy people is easy! Make some vegetables, do anything except fry them, and have some salad around! :) If you want to create a holiday table thats even more exciting to the healthy crowd, then try these tempeh skewers. Perfect for entertaining, the presentation of these skewers look beautiful and you may just be able to get the latke eating crowd into tempeh as well!

Tempeh Skewers with Tomatoes
1 package tempeh (if serving a large crowd, just 3-4 times the recipe)
1/4c balsamic vinegar
2 tbsp honey
2 tbsp tamari
1/4 c extra virgin olive oil
2 tbsp water
2 cloves garlic, optional, (depending on whether you want the guests to smell like garlic)
1/2 tsp chili powder
salt and pepper, to taste
1 box fresh grape or cherry tomatoes.
Cut tempeh into cubes. Marinate overnight in fridge. The next day, baked, covered for 30 minutes on 350. Alternate skewering the tempeh with fresh tomatoes. This can be done several hours before, since the dish can be served at room temperature.
