Chocolate Pomegranate Bark

My husband does NOT EVER eat fruit. Something about it makes him nauseous (the insanity!!) The first time I saw him eating a fruit was when I placed a container of pomegranate seeds into the freezer. He began picking at them and loved it! I took that idea, added some chocolate and created this bark recipe... because everything really is better with chocolate.
WARNING: HIGHLY ADDICTIVE DESSERT AHEAD, PROCEED WITH CAUTION!

Chocolate Pomegranate Bark
1c cocoa powder (I like raw cacao)
1 cup melted coconut oil
1/2 cup maple syrup (less if you don't mind a less sweet, more bitter flavor)
1/2 pomegranate, seeded
fleur de sal, optional, to sprinkle on top
cacao nibs, optional
Mix oil, cacao powder and maple syrup until consistency resembles chocolate syrup. Pour onto a wax paper lined tray and sprinkle pomegranate seeds and salt and cacao nibs if using. Freeze for an hour , then break into pieces. Keeps in the freezer. (Take out right before you are ready to enjoy, or else it melts!)
