Grain Free Tabbouleh Salad with Pistachio Zaatar Topping

Grain Free Tabouleh Salad
2 cucumbers
1 cup parsley, chopped fine
2-3 scallions. chopped fine
3/4c hemp seeds
1 cup pomegranate seeds
1 cup fennel, sliced thin and chopped small
juice of 2 lemons
salt and pepper, to taste
1/2 tsp sumac
1 tsp dried mint
oil, if needed (only 2-3 tbsp)
fruit, optional, as in season (apples, peaches and nectarines all work well)
Mix all ingredients together and let marinate 30 minutes before serving.


Pistachio- Zaatar Topping
1 cup shelled pistachios
1 tbsp zaatar spice
salt, to taste
Process everything together keeping some chunks of pistachios.
