Raw Crudite Platter with Three Dips

Talk about something for everyone! Crudite platters are a great way to get kids to try new things because of how exciting and enticing it looks! I love a mix of cooked and raw vegetables and including multiple dips makes the veggies even more fun!

Raw Crudite Platter with Three Dips

Crudite Platter: Vegetables such as asparagus, cauliflower florets, celery sticks, carrot sticks, snap peas, colored peppers, cucumbers, grape or cherry tomatoes, radicchio, endive, watermelon radish, nuts and seeds, crackers (such as Mary's Gone Crackers or homemade flax crackers) - these are just examples - the sky's the limit with veggie options!

Carrot- Turmeric Hummus

2 cans chickpeas

1-2 carrots, depending on size, chopped

2 gloves garlic

3 tbsp fresh lemon juice

3 tbsp olive oil

1 tsp cumin

2 tsp turmeric

salt, to taste (depending whether you used salted or no salt chickpeas)

Blend everything together and enjoy!

Optional garnishes: pomegranate seeds, edible flower petals, sesame or hemp seeds, pumpkin seeds

Avocado Pesto Dip

2 bunches basil, cleaned and dried well

1/2 avocado, peeled and seeded

1 tbsp hemp seeds

1 tsp nutritional yeast

1 clove garlic

2 tbsp lemon juice

1 tbsp yellow raisins, optional for sweetness

Salt, to taste

water, to thin

Blend everything in a high speed blender until fully mixed

Creamy Beet Dip

1/2 beet, roasted (can use the precooked Love Beets)

1 can white beans, rinsed

2 cloves garlic

1 tbsp sunflower seeds

1 tbsp lemon juice

1 tbsp extra virgin olive oil

1/2 tsp cumin

Salt and pepper, to taste

Mix everything in a processor or high speed blender until fully mixed.

Optional garnish: parsley, hemp seeds, chopped nuts
