Basic Vegan Omelet

My instagram feed is constantly flooded with chickpea flour recipes because it is my favorite alternative flour to work with. Its not as crazy complicated as coconut flour and not as dense as almond flour. I've been making these omelet recipes with every mix in imaginable and the result is always super delicious!

Basic Vegan Omelet (for 1)
1/3c chickpea flour
1/3c water
1 tbsp oil
1/2 tsp baking powder
1 tsp turmeric
1 tsp nutritional yeast (optional)
Add all dry ingredients to a bowl and then whisk in water and oil. Heat a small skillet to medium heat. Use cooking spray if needed. When hot, pour the chickpea mixture and cover, letting cook 3-4 minutes, until the top looks partially solid. Carefully flip over with a spatula, fill with veggies and fold over (if your omelet is not folding, no worries, just eat it round).
