Chickpea Flour Pancakes

I used a LOT of chickpea flour in my home as an egg substitute when my daughter was allergic to eggs. Since then we have reintroduced eggs into her diet a little bit but I fell in love with the stuff and still buy chickpea flour bags by the case.

Chickpea Flour Pancakes (Serves 1)
1/3 c chickpea flour
1 tbsp flax seeds
1/2 banana, mashed
1/3c almond milk
1/2 tsp baking powder
splash, vanilla
sprinkle, cinnamon
Heat a skillet and drop silver dollar size pancake batter. Flip when cook through on one side. Serve with fruit and/ or maple syrup.
