The Most Perfect Apple Crisp

Did I get your attention with that title? What makes this apple crisp PERFECT is that it can accommodate sooooooo many people - it is vegan, paleo, nut and seed free, with NO added sweetener of any kind! That means no dates, maple syrup, coconut sugar- nada!

So what is the secret ingredient? Tigernut flour! Tigernut flour is paleo approved and allergy friendly as it does not actually contain any nut products. The tiger nut is a sweet slightly nutty flavored tuber! Are you running to the store to get tiger nut flour yet??

The Most Perfect Apple Crisp

Filing

4 apples, peeled and sliced thin

1 tsp lemon juice

1 tsp vanilla

1 tsp cinnamon

Topping

1/4 cup coconut oil, melted

3/4 cup tiger nut flour

1 tsp vanilla

1 tsp cinnamon

Preheat the oven to 400 degrees. Mix filling ingredients and place in 8x8 glass baking dish. Mix the tiger nut flour, coconut oil, vanilla and cinnamon and work through with hands to create crumbs. Sprinkle crumbs over the filling and bake 30 minutes (covered for 25 minutes, then uncover it the last 5 minutes).
