Last summer, I had a doctor who recommended eliminating all beans for an inflammatory skin condition. I tried it for a total of 2 weeks before I gave up (I couldn't even figure out what to eat, so I sustained myself on chalky protein smoothies for breakfast, lunch and dinner!) Ever since then, I've been making up for lost time and eating more beans than ever- it's just my favorite thing!
Here is a good summer salad to make again and again this season- its perfect for to take along to the beach, a picnic, any pot luck or BBQ side dish!

Summertime Quinoa Mango Salad
1 cup quinoa, cooked
1 can black beans, drained and rinsed
1 mango, diced
1 avocado, diced
Handful parsley, chopped
2 tablespoons oil
2 tablespoons lemon
Salt and pepper, to taste
1/2 teaspoon cumin
1/2 teaspoon dried basil
When quinoa is cooled, add in black beans, mango, avocado and parsley. Whisk all the dressing ingredients together, leaving the oilfot last. Pour over quinoa, toss well, and serve.
