Coconut- Chocolate Chip Cookie Dough Balls

We all need that quick go- to no- bake recipe for when it's Friday afternoon and the kids ask "what's for dessert?" My kids made these balls beginning to end- playing with the dough for wayyyy too long, making a mess of my just cleaned kitchen... while you certainly can go that route, you may just want to roll up your sleeves and get your chocolate chip cookie dough balls done in under 10 minutes! (You decide 😉)

This recipe is adapted from this one which has too much sweetener for me.

Coconut- Chocolate Chip Cookie Dough Balls

1 1/4c Almond flour

1/4c Coconut flour 1 tbsp Coconut oil, melted 1/4c Coconut butter, melted

1/4c maple syrup (add an extra 2 tablespoons to make it sweeter) 1-2 tbsp non dairy milk, as needed to bring balls together Splash Vanilla 3-4 tbsp chocolate chips, poked into the balls

Mix almond flour and coconut flour in a bowl. In a separate bowl, mix melted coconut oil, coconut butter, a splash of vanilla and maple syrup. Combine and mix well. Add milk if dough is too dry.

Roll into balls and add 5-6 mini chocolate chips around each ball. Place on a parchment lined tray to set in the freezer half hour then store in either the fridge or freezer.
