Morning Glory Baked Oatmeal

Serves 4

Breakfast is definitely one of the most hectic meals of my day- I need to make my kids lunches, pack their snacks, make sure their hair and teeth are brushed, find my older one's glasses, homework, notebooks... I'm sure this is nothing unique to my house- and that moms worldwide suffer the same plight of a crazy morning routine! Whether I'm headed to the gym or straight to work appointments after I drop the kids at school, there is NEVER any extra time to make a proper breakfast. I'm always running out the door with one shoe on, trying to remember if I brushed my own teeth!

When I discovered the baked oatmeal concept, I knew this was the perfect answer to my morning craziness! I make a big batch of baked oatmeal once a week, pre- slice it into portioned out squares and keep it in the fridge to be re- warmed each morning! There's so much goodness inside it that you don't even need any fruit or nut butter topping, but feel free to drizzle a little something- something on top!

PS: Including the protein powder, a rough calculation would estimate that there’s 17 grams of protein per serving here so it really should fill you up and keep you going until lunch!

Morning Glory Baked Oatmeal

2 cups oats

2 ripe bananas

1/2 cup almond butter

1 serving protein powder, optional (I used Garden of Life Raw Protein and Greens)

1 carrot shredded

2 green apples, grated

1/4 cup raisins, optional (I omitted because the protein powder was sweetened)

Sweetener, optional, if needed (to me, the banana is enough)

1 teaspoon baking soda

Lots of cinnamon

Preheat oven to 350. Mix all ingredients together. Bake for 20 minutes.
