I've been obsessed with baked oatmeal lately- probably because its pre- made for me in the fridge, has everything I need to keep me full for a while and tastes better than boring runny oatmeal! Here's my coconutty twist!

Blueberry Coconut Baked Oatmeal
2 bananas, mashed
1 1/2 cup quick oats
1/2 cup coconut shreds, unsweetened
1/4 cup coconut butter, melted
1/4 cup non- dairy milk
6 oz bag frozen blueberries (I like the smaller Wild Blueberries)
sprinkling of cinnamon + a splash of vanilla
Preheat oven to 350. Mix all ingredients together. Place in a pyrex and bake about 20 minutes. Allow to cool before slicing.
