Sweet Potato Oat Pancakes

I’ve been really enjoying researching all the lactation friendly superfoods and creating easy recipes with them! As part of my meal prep, I always have roasted sweet potatoes on hand, so this recipe came together in minutes.

Some of my favorite lactation friendly foods include:

- Almonds and almond butter

- Cooked fruit dishes like berry compotes, apple sauce and apple crisp

- Dried fruit such as dates, figs and apricots

- Steamed carrots

- Roasted sweet potatoes

- Raw and Sauteed spinach

- Zucchini

- String Beans

- Eggplant

- Grains including Oats, Bulgur and Millet

- Flax meal

- Chia pudding

This recipe boasts a bunch of these lactation friendly foods- oats, sweet potato and flax! You can use your favorite non- dairy milk. My personal favorite is Ripple brand Pea Milk, because of its 8 grams of protein per cup.

Sweet Potato Oat Pancakes (makes 12)

1 1/2c oatmeal

2 tablespoons flax meal 1 1/4 cup non- dairy milk 1 medium sweet potato roasted or steamed (1 cup measured) 1 teaspoon cinnamon 1 teaspoon vanilla 1 teaspoon baking powder 1 tablespoon maple syrup

Blend all ingredients in a high speed blender until well incorporated. Cook in a skillet on low- medium heat.
