I tried matcha a few times but never saw the appeal until I made these matcha pancakes-The health benefits of matcha are plentiful- it is high in antioxidants, especially the powerful EGCs which have cancer fighting properties. It enhances focus and concentration, while still keeping the body and mind calm, unlike the jittery side effects of coffee. In the past, I've probably used too much in one recipe, so in these pancakes I used just enough to get the flavor of the green tea without it tasting, well, gross. Check out this recipe for a protein- packed, energizing morning meal!

Matcha Protein Pancakes
1/4c chickpea flour
1 tbsp protein powder (I prefer unsweetened and unflavored Nutrasumma Unflavored Protein Powder)
1 tsp Pure Chimp matcha powder
1/2c almond milk (plus more if batter is too dry)
1/2 ripe banana
1/2 tsp vanilla
1/2 tsp baking powder
Mix all dry ingredients first, then add wet ingredients. Let batter sit 5-10 minutes to incorporate. If batter is very dry, add an additional splash of almond milk. Heat up a non- stick or oiled skillet to medium heat. Add silver dollar size pancake batter and cook, flipping once.
